- 4 boneless, skinless chicken thighs (about 1.5 lbs total)
- 1 cup fresh blueberries
- 2 tablespoons fresh thyme leaves, roughly chopped
- 3 cloves garlic, minced
- 1/2 cup chicken broth

- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt and 1/4 teaspoon black pepper, combined
Instructions
- Step 1: Pat chicken thighs dry and season generously with the combined salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 5-7 minutes per side, until golden brown. Remove chicken from skillet and set aside on a plate.
- Step 2: Reduce heat to medium. Add the minced garlic and half of the chopped thyme to the same skillet, stirring for about 30 seconds until fragrant. Be careful not to burn the garlic.
- Step 3: Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan with a wooden spoon. Add the fresh blueberries and the remaining chopped thyme. Bring the mixture to a gentle simmer.
- Step 4: Return the seared chicken thighs to the skillet, nestling them into the bubbling blueberry-thyme sauce. Reduce heat to medium-low, cover, and let simmer for 5-10 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C) and the sauce has slightly thickened.
- Step 5: Taste the sauce and adjust seasoning if needed. Serve the chicken immediately, spooning the luscious blueberry-thyme sauce generously over each thigh. Garnish with fresh thyme sprigs if desired.
