Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 large egg
- ½ cup milk
- 8 tablespoons unsalted butter, melted
- 2 teaspoons ground cinnamon
Instructions
- Step 1: Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×5 inch loaf pan. In a large bowl, whisk together the all-purpose flour, ½ cup of the granulated sugar, baking powder, and salt.
- Step 2: In a separate medium bowl, whisk together the egg, milk, and 4 tablespoons of the melted butter until well combined. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix; a few lumps are acceptable.
- Step 3: In a small bowl, combine ¼ cup of the granulated sugar with 1 teaspoon of the ground cinnamon. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Add the remaining batter to the pan, then sprinkle the rest of the cinnamon sugar mixture on top. Using a knife or skewer, gently swirl the cinnamon sugar into the batter a few times.
- Step 4: Bake for 45-55 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. Let the bread cool in the pan for 10 minutes before carefully inverting it onto a wire rack to cool completely.
- Step 5: While the bread is cooling, prepare the "donut" coating. In a small bowl, combine the remaining ¼ cup granulated sugar with the remaining 1 teaspoon of ground cinnamon. In another small bowl, melt the remaining 4 tablespoons of butter.
- Step 6: Once the bread is cool enough to handle (or slightly warm), brush the entire surface of the bread generously with the melted butter. Immediately sprinkle and gently press the prepared cinnamon sugar mixture over all sides of the bread until it is evenly coated. Slice and serve.
Notes
- Keep your donut bread deliciously fresh for up to 3 days by storing it in an airtight container at room temperature.
- For that fresh-baked warmth, gently reheat individual slices in the microwave for 10-15 seconds, or wrap in foil and warm in a 300°F (150°C) oven for about 5-10 minutes.
- This delightful bread is perfect with your morning coffee or a cozy cup of tea, but for a true treat, try serving warm slices à la mode with a scoop of vanilla ice cream!
- When mixing your batter, remember the golden rule for quick breads: mix until *just* combined with a few lumps remaining, as overmixing can lead to a tough loaf.
