Ingredients
Scale
- 16 ounces fresh or frozen cheese tortellini
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup chicken or vegetable broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for garnish
- 5 ounces fresh baby spinach
- Salt and freshly ground black pepper to taste
Instructions
- Step 1: Cook the tortellini according to package directions in a large pot of salted water until al dente. Reserve about 1/2 cup of pasta water before draining the tortellini.
- Step 2: While the tortellini cooks, heat the olive oil and butter in a large skillet or Dutch oven over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Step 3: Pour in the chicken or vegetable broth, bringing it to a gentle simmer. Then, stir in the heavy cream and continue to simmer for 3-5 minutes, allowing the sauce to thicken slightly.
- Step 4: Reduce the heat to low. Stir in the grated Parmesan cheese until melted and smooth. Add the fresh baby spinach and cook, stirring occasionally, until the spinach wilts down, about 2-3 minutes. Season the sauce with salt and freshly ground black pepper to taste.
- Step 5: Add the drained tortellini to the skillet with the creamy sauce. Toss gently to coat all the tortellini. If the sauce is too thick, add a tablespoon or two of the reserved pasta water until it reaches your desired consistency. Serve immediately, garnished with extra Parmesan cheese if desired.
Notes
- Leftovers keep beautifully in an airtight container in the fridge for up to 3 days; for best quality, enjoy within 2 days.
- To reheat, gently warm portions on the stovetop over low heat, adding a splash of milk or broth to revive the creamy texture, stirring frequently until just heated through.
- Serve this rich, dreamy tortellini alongside a crisp green salad with a bright vinaigrette to balance the creamy richness, or with warm crusty bread for soaking up every last drop of sauce.
- Chef's Tip: Don't skip reserving that pasta water! It's your secret weapon for perfectly adjusting the sauce's consistency, ensuring it beautifully clings to every piece of tortellini.
