Ingredients
Scale
- 2 slices rustic bread (sourdough or multi-grain)
- 1/2 cup whole milk ricotta cheese
- 2 large eggs
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon sea salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 1 tablespoon fresh chives, finely chopped (optional)
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Step 1: Toast the bread slices to your desired crispness. While the bread is toasting, combine the ricotta cheese with 1/8 teaspoon of sea salt and 1/8 teaspoon of black pepper in a small bowl, mixing gently until just combined.
- Step 2: Heat the olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook them sunny-side up, frying until the whites are set and the yolks are still runny, about 2-3 minutes. Season the eggs with the remaining sea salt and black pepper.
- Step 3: Once the toast is ready, spread an even layer of the seasoned ricotta cheese mixture generously over each slice of warm toast.
- Step 4: Carefully slide one cooked egg on top of the ricotta layer on each piece of toast.
- Step 5: Garnish with fresh chopped chives and a sprinkle of red pepper flakes, if using, and serve immediately.
Notes
- While this toast is best enjoyed fresh, you can prepare the seasoned ricotta mixture up to 2 days in advance and store it in an airtight container in the refrigerator, making quick assembly a breeze.
- This dish truly shines when fresh, but should you have leftover plain toast, a quick re-toast brings back its crispness, and the seasoned ricotta is delightful enjoyed cold from the fridge or at room temperature.
- Elevate your meal by pairing this creamy toast with a side of fresh sliced avocado or a small green salad dressed with a light vinaigrette for a well-rounded and delightful experience.
- For a harmonious flavor in every bite, remember to divide your sea salt and black pepper, seasoning both the creamy ricotta and the eggs separately; this ensures no component is under-seasoned.
