- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1.5 cups uncooked long-grain white rice
- 3 cups chicken broth
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried dill
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Instructions
- Step 1: Preheat your oven to 375°F (190°C). In a 9×13 inch baking dish, combine the diced chicken, uncooked rice, chicken broth, Greek yogurt, lemon juice, minced garlic, dried dill, dried oregano, salt, and pepper. Stir everything together well until all ingredients are evenly distributed.
- Step 2: Cover the baking dish tightly with aluminum foil. Bake for 35 minutes, allowing the rice to absorb the liquid and the chicken to begin cooking through.
- Step 3: Carefully remove the baking dish from the oven and remove the foil. Stir the mixture gently to prevent sticking and ensure even cooking. Return the uncovered dish to the oven.
- Step 4: Continue baking for another 15-20 minutes, or until the rice is tender, all the liquid has been absorbed, and the chicken is fully cooked (internal temperature of 165°F or 74°C).
- Step 5: Remove the dish from the oven and let it rest, uncovered, for 5-10 minutes. Fluff the rice with a fork before serving warm, optionally garnished with fresh dill or a dollop of extra Greek yogurt.
Notes
- Leftover chicken tzatziki rice keeps beautifully in an airtight container in the fridge for up to 3 days, making meal prep a breeze.
- For best results when reheating, pop leftovers in the microwave with a tiny splash of water or broth, or warm gently in the oven covered with foil, to keep the rice moist and fluffy.

- Don't skip the resting time after baking! It allows the rice to fully absorb any remaining liquid and steam, giving you perfectly tender and fluffy grains every time.
