Instructions
- Step 1: In a large microwave-safe bowl, combine the butterscotch chips, creamy peanut butter, and unsalted butter. Microwave on high for 60-90 seconds, stirring every 30 seconds, until smooth and completely melted. Alternatively, melt in a double boiler over simmering water.
- Step 2: Remove the melted mixture from the heat and stir in the vanilla powder until well combined.
- Step 3: Add the crispy chow mein noodles to the bowl and gently fold them into the butterscotch mixture using a spatula until all the noodles are thoroughly coated.
- Step 4: Drop spoonfuls of the noodle mixture onto baking sheets lined with parchment paper. Use your fingers or the back of a spoon to shape each spoonful into a small, rounded "nest" with an indentation in the center.
- Step 5: Place the baking sheets in the refrigerator and chill for at least 30 minutes, or until the cookies are firm and set.
- Step 6: Once the "nests" are firm, gently place 2-3 candy robin's eggs into the indentation of each cookie before serving.
Notes
- Keep your 'nests' fresh and firm by storing them in an airtight container in the refrigerator for up to a week; they're even better when slightly chilled!
- Since these are no-bake treats, there's no need to reheat them! For a slightly softer bite, let them sit at room temperature for 10-15 minutes before enjoying, but they're delicious straight from the fridge too.
