Master authentic Greek Lemon Rice! Sautéed onion, garlic, and toasted long-grain rice absorb savory broth, creating fluffy, zesty perfection. Full instructions & nutrition info included.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Step 1: Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté for 3-5 minutes until softened and translucent.
  2. Step 2: Add the minced garlic to the saucepan and cook for another minute until fragrant. Stir in the long-grain white rice and toast it for 2-3 minutes, stirring occasionally, until the edges of the rice grains appear slightly translucent.
  3. Step 3: Pour in the chicken or vegetable broth and fresh lemon juice. Add the dried oregano, salt, and black pepper to taste. Stir everything together and bring the mixture to a rolling boil.
  4. Step 4: Once boiling, reduce the heat to low, cover the saucepan tightly with a lid, and simmer for 15-18 minutes, or until all the liquid has been absorbed and the rice is tender. Do not lift the lid during this time.
  5. Step 5: Remove the saucepan from the heat and let it rest, still covered, for 5-10 minutes. Uncover, fluff the rice gently with a fork, and serve warm.

Notes

  • Keep any leftover Greek Lemon Rice in an airtight container in the refrigerator for up to 3-4 days; it makes a delightful next-day lunch!
  • To bring leftovers back to life, gently reheat on the stovetop or in the microwave, adding a tiny splash of extra broth or water to help maintain its wonderful moisture and texture.
  • This versatile lemon rice is a fantastic side for grilled chicken, baked fish, or even alongside a fresh Greek salad for a complete and vibrant meal.
  • For an even brighter and more fragrant lemon profile, consider stirring in a teaspoon of fresh lemon zest along with the juice in Step 3, or right before serving for a pop of extra aroma.
