Instructions
- Step 1: Preheat oven to 400°F (200°C). In a large bowl, toss the cauliflower florets with 1 tablespoon of cornstarch, the all-purpose flour, a pinch of salt, and a splash of water or oil until evenly coated. Spread the coated cauliflower on a baking sheet and roast for 20-25 minutes, or until tender-crisp and lightly browned, flipping halfway through.
- Step 2: While the cauliflower roasts, prepare the General Tso sauce. In a medium bowl, whisk together the low-sodium soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, and the remaining 2 tablespoons of cornstarch with 1/4 cup of water.
- Step 3: Heat a small saucepan or skillet over medium heat. Pour in the whisked sauce mixture. Bring to a simmer, stirring constantly, and cook for 2-3 minutes until the sauce thickens and becomes glossy. Remove from heat.
- Step 4: Once the roasted cauliflower is done, transfer it to the pan with the thickened General Tso sauce. Toss gently until all the cauliflower florets are thoroughly coated in the sauce.
- Step 5: Serve the General Tso's Cauliflower immediately over cooked brown rice. Garnish with sliced green onions and sesame seeds, if desired, for a complete and healthy weeknight dinner bowl.

- To bring back some of that lovely texture, gently reheat your leftover cauliflower in a preheated oven or air fryer at 350°F (175°C) for about 5-7 minutes, rather than the microwave, to prevent it from getting too soft.
