Instructions
- Step 1: Prepare the ginger simple syrup by combining granulated sugar, 1/2 cup water, and thinly sliced ginger in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Bring to a gentle simmer, then remove from heat and let steep for 15-20 minutes to infuse the ginger flavor. Strain the syrup into a small bowl and discard the ginger slices; let cool completely.
- Step 2: Make the peach puree by blending the peeled and pitted peaches in a blender until smooth. If needed, add a tablespoon or two of water to help with blending. For a smoother texture, you can strain the peach puree through a fine-mesh sieve, pressing out all the liquid.
- Step 3: In a pitcher or large mixing glass, combine the cooled ginger simple syrup, the peach puree, and the fresh lemon juice. Stir well to ensure all ingredients are thoroughly mixed.
- Step 4: Fill two serving glasses generously with ice cubes. Divide the peach-ginger mixture evenly between the two glasses, pouring it about halfway up each glass.
- Step 5: Top each glass with chilled sparkling water or club soda, stirring gently to combine. Garnish each Ginger Peach Sparkler Mocktail with a fresh mint sprig and a thin slice of peach, if desired. Serve immediately.
