Experience elevated comfort! Our Gourmet Blueberry Grilled Cheese blends creamy Brie with sweet-tart balsamic blueberries on buttery brioche.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 slices brioche bread
  • 3 oz Brie cheese, thinly sliced
  • 1/4 cup fresh blueberries
  • 1 tablespoon unsalted butter, softened
  • 1 tablespoon balsamic glaze
  • 1/2 teaspoon fresh thyme leaves, finely chopped
  • Pinch of sea salt (optional)

Instructions

  1. Step 1: Prepare the blueberry filling and sandwich components. In a small bowl, gently mash the fresh blueberries with the balsamic glaze and finely chopped fresh thyme leaves. Slice the Brie cheese into thin pieces. Generously butter one side of each slice of brioche bread.
  2. Step 2: Assemble the grilled cheese. Place one slice of brioche bread, butter-side down, in a clean, dry skillet or on a griddle (do not turn on heat yet). Arrange half of the sliced Brie cheese over the bread. Spoon the blueberry mixture evenly over the Brie, then top with the remaining Brie cheese.
  3. Step 3: Close and begin cooking. Place the second slice of brioche bread on top, butter-side up. Turn the heat to medium-low. Cook for 3-5 minutes, or until the bottom slice is golden brown and the cheese begins to melt.
  4. Step 4: Flip and finish cooking. Carefully flip the sandwich using a spatula. Cook for another 3-5 minutes on the second side, or until golden brown and the cheese is fully melted and oozy. Press gently with the spatula occasionally to ensure even browning.
  5. Step 5: Serve immediately. Remove the grilled cheese from the skillet, slice in half diagonally, and serve hot. A sprinkle of sea salt on top can enhance the flavors.

Notes

  • While this gourmet grilled cheese is absolutely at its best enjoyed fresh, any leftovers can be wrapped well and refrigerated for up to 24 hours, though the bread may lose some crispness.
  • To bring your refrigerated sandwich back to life, gently reheat it in a dry skillet over medium-low heat or pop it in a toaster oven until warm and crisp, steering clear of the microwave for optimal texture.
  • This gourmet treat shines bright on its own, but for a complete experience, pair it with a crisp green salad or a small bowl of creamy tomato soup to beautifully complement the rich flavors.
  • The secret to a truly golden, non-burnt brioche and perfectly melted Brie is patience; keep the heat on medium-low and let it cook slowly to achieve that enviable ooey-gooey center and beautifully crisp exterior.
