- 1 lb (450g) Lean Ground Beef (90% lean or higher)
- 1/2 cup (120g) Beef Beef Pepperoni, finely diced
- 1 cup (112g) Part-Skim Mozzarella Cheese, shredded
- 1/2 cup (120ml) Low-Sugar Pizza Sauce
- 8–10 Large Protein Tortillas or Low-Carb Wraps
- 1 large Egg, whisked
- 1 tsp Italian Seasoning
- 1/2 tsp Garlic Powder
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large skillet, brown the lean ground beef over medium heat until fully cooked. Drain any excess fat. Add the finely diced beef beef pepperoni, pizza sauce, shredded mozzarella cheese, Italian seasoning, and garlic powder to the skillet. Stir well to combine and cook for 2-3 minutes until the cheese begins to melt and the mixture is heated through. Remove from heat and let cool slightly.
- Step 2: Lay out one protein tortilla or low-carb wrap on a clean surface. Spoon about 2-3 tablespoons of the beef and beef pepperoni filling in a line across the center of the tortilla, leaving about an inch of space from each edge.
- Step 3: Fold in the sides of the tortilla over the filling. Then, starting from one end, tightly roll the tortilla up, creating a log. Brush a small amount of the whisked egg onto the final seam to seal the roll securely. Repeat with the remaining tortillas and filling.
- Step 4: Line a baking sheet with parchment paper. Using a sharp knife, cut each rolled tortilla log into 1-inch (2.5 cm) thick individual pizza rolls. Arrange the cut rolls on the prepared baking sheet, ensuring they are not touching.
- Step 5: Brush the tops and sides of each pizza roll with the remaining whisked egg. Bake for 15-20 minutes, or until the rolls are golden brown and the filling is hot and bubbling. Remove from the oven and let cool for a few minutes before serving.

- For easy future snacks, store cooled rolls in an airtight container in the fridge for up to 3 days, or freeze them in a single layer on a baking sheet before transferring to a freezer bag for up to a month.
