- 1 cup (120g) Glutinous Rice Flour (Mochiko)
- 1/2 cup (100g) Granulated Sugar
- 3/4 cup (180ml) Water
- 1 large (approx 150g) Ripe Banana, mashed
- 1/4 teaspoon Salt
- 1 tablespoon Vegetable Oil (for greasing)
- 1/4 cup (30g) Cornstarch or Potato Starch (for dusting)
Instructions
- Step 1: Prepare the mochi dough mixture. In a large microwave-safe bowl, whisk together the glutinous rice flour, granulated sugar, and salt. Add the water and the mashed ripe banana, mixing thoroughly until a smooth, lump-free batter is formed.
- Step 2: Cook the mochi dough. Cover the bowl loosely with plastic wrap (leaving a small vent) and microwave on high for 2 minutes. Stir the mixture vigorously with a wet spatula. Cover again and microwave for another 1-2 minutes, or until the dough becomes translucent, very sticky, and pulls away from the sides of the bowl. Alternatively, steam the mixture for 15-20 minutes over medium-high heat.
- Step 3: Cool and prepare for shaping. Lightly grease a baking sheet or a clean work surface with the vegetable oil. Carefully transfer the hot mochi dough onto the greased surface.
- Step 4: Dust and cut. Dust your hands generously with cornstarch or potato starch to prevent sticking. Gently flatten the mochi dough into a rectangle or desired shape, about 1/2 inch thick. Using a sharp knife or pizza cutter, also dusted with starch, cut the mochi into bite-sized pieces or desired shapes.
- Step 5: Serve. Dust each piece lightly with additional cornstarch to prevent sticking. Serve immediately for the best chewy texture, or store in an airtight container at room temperature for up to a day.
Notes
- For optimal chewiness, enjoy your mochi on the day it's made; if you have leftovers, keep them in an airtight container at room temperature and they'll be lovely for up to 24 hours.
- Should your mochi lose a bit of its tender chewiness overnight, a quick 10-15 second zap in the microwave will bring back that delightful softness and stretch.
- These banana mochi are absolutely heavenly served fresh, still slightly warm from preparation, perhaps alongside a cup of green tea or a light fruit salad for a delightful treat.
- For that truly irresistible banana flavor, make sure your banana is super ripe – think leopard-spotted skin – as this will naturally sweeten and deepen the taste of your mochi.
