Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 2 tablespoons fresh lemon zest (from 2–3 lemons)
- 1/4 cup fresh lemon juice
- 1 teaspoon baking powder
- 1 cup powdered sugar (for rolling)
Instructions
- Step 1: In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, then mix in the lemon zest and fresh lemon juice until well combined.
- Step 2: In a separate medium bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 1-2 hours, or until firm enough to handle.
- Step 3: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. Place the powdered sugar in a shallow bowl. Scoop rounded tablespoons of the chilled dough and roll them into 1-inch balls, then generously roll each ball in the powdered sugar, ensuring it's completely coated.
- Step 4: Place the coated cookie dough balls about 2 inches apart on the prepared baking sheets. Bake for 9-12 minutes, or until the edges are lightly set and the cookies are puffed, spread, and beautifully crinkled. The centers may still appear slightly soft.
- Step 5: Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely.
Notes
- Keep your Lemon Crinkle Cookies fresh and soft for up to 5 days by storing them in an airtight container at room temperature; adding a slice of plain bread to the container can work wonders.
- For a warm, 'just-baked' treat, gently warm a cookie in the microwave for 5-10 seconds or in a low oven (250°F/120°C) for a couple of minutes until it’s perfectly tender.
- These sunny cookies are a joy on their own, but truly delightful when served with a refreshing glass of iced tea, a dollop of whipped cream, or alongside a simple fruit salad for a light dessert.
- For that picture-perfect crinkle, ensure your dough is well-chilled and roll each ball extra generously in powdered sugar—don't be shy, a thick coating is key for beautiful contrast and texture!
