Instructions
- Step 1: In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lime zest and lime juice until well combined.
- Step 2: In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Cover the bowl and chill the dough for at least 1 hour, or up to 2 hours.
- Step 3: Preheat your oven to 350°F (175°C). Place the remaining ½ cup of granulated sugar in one shallow bowl and the confectioners' sugar in another shallow bowl. Scoop rounded tablespoons of the chilled dough and roll each into a ball.
- Step 4: First, roll each dough ball in the granulated sugar, ensuring it's lightly coated. Then, generously roll each ball in the confectioners' sugar, making sure it's completely covered with a thick layer. Place the coated dough balls about 2 inches apart on baking sheets lined with parchment paper.
- Step 5: Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft. The cookies will spread and the confectioners' sugar will crackle, creating the "crinkle" effect.
- Step 6: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
