Instructions

  1. Step 1: Season the chicken pieces with salt and black pepper. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned on all sides. Remove the chicken from the skillet and set aside.
  2. Step 2: Reduce the heat to medium. Add the minced garlic to the skillet and cook for 1 minute until fragrant, stirring constantly to prevent burning.
  3. Step 3: Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the potato gnocchi. Return the cooked chicken to the skillet, nestling it among the gnocchi. Bring back to a gentle simmer, then cover and cook for 8-10 minutes, or until the gnocchi are tender and the sauce has slightly thickened, stirring halfway through.
  4. Step 4: Remove the skillet from the heat. Stir in the lemon zest, lemon juice, and fresh spinach until the spinach has wilted. Taste and adjust seasoning with salt and pepper as needed before serving warm.
