Transform ripe bananas, creamy peanut butter, and oats into delightful Peanut Butter Banana Cookies! Just mash, mix, and bake these naturally sweet, chewy bites.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 medium ripe bananas
  • 1/2 cup creamy peanut butter
  • 1 cup rolled oats
  • 1/4 cup mini chocolate chips
  • 1 teaspoon alcohol-free vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup (optional, for added sweetness)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Step 2: In a medium mixing bowl, mash the ripe bananas thoroughly with a fork until mostly smooth with a few small lumps remaining.
  3. Step 3: Add the peanut butter, rolled oats, alcohol-free vanilla extract, ground cinnamon, and optional honey or maple syrup to the mashed bananas. Mix well until all ingredients are combined. Gently fold in the mini chocolate chips.
  4. Step 4: Drop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Use the back of a spoon or your fingers to flatten them slightly, as they won't spread much during baking.
  5. Step 5: Bake for 12-15 minutes, or until the edges are lightly golden brown and the cookies are set.
  6. Step 6: Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Keep these delightful cookies fresh for up to 3-4 days in an airtight container at room temperature, or extend their deliciousness by refrigerating them.
  • If you fancy a warm, gooey treat, gently microwave a cookie for 10-15 seconds, or pop it in a toaster oven for a few minutes until just warm and fragrant.
  • Enjoy these wholesome cookies as a satisfying breakfast on the go, a post-workout snack, or pair them with a glass of cold milk or a scoop of vanilla ice cream for a delightful dessert.
  • For the best flavor and a naturally sweeter cookie, make sure your bananas are very ripe—think brown spots galore! This not only adds sweetness but also helps with the cookie's tender texture.
