Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Step 2: In a medium mixing bowl, mash the ripe bananas thoroughly with a fork until mostly smooth with a few small lumps remaining.
- Step 3: Add the peanut butter, rolled oats, alcohol-free vanilla extract, ground cinnamon, and optional honey or maple syrup to the mashed bananas. Mix well until all ingredients are combined. Gently fold in the mini chocolate chips.
- Step 4: Drop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Use the back of a spoon or your fingers to flatten them slightly, as they won't spread much during baking.
- Step 5: Bake for 12-15 minutes, or until the edges are lightly golden brown and the cookies are set.
- Step 6: Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
