Experience the joy of our Refreshing Strawberry Crackle Salad! Juicy strawberries meet creamy Greek yogurt and a delightful puffed rice crunch, brightened with fresh mint.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Fresh Strawberries, 2 cups (about 300g), hulled and halved
  • Plain Greek Yogurt, 1 cup (about 240g)
  • Puffed Rice Cereal (unsweetened), 1/2 cup
  • Honey or Maple Syrup, 2 tablespoons (adjust to taste)
  • Fresh Mint Leaves, 1/4 cup, finely chopped
  • Lime Juice, 1 tablespoon (from 1/2 a lime)
  • Alcohol-Free Vanilla Extract, 1/2 teaspoon

Instructions

  1. Step 1: Prepare the fruit and herbs. Gently wash and hull the fresh strawberries, then slice them in half or into quarters if very large. Wash and finely chop the fresh mint leaves, reserving a small pinch for garnish.
  2. Step 2: Whisk together the creamy dressing. In a medium bowl, combine the plain Greek yogurt, honey (or maple syrup), fresh lime juice, and alcohol-free vanilla extract. Whisk until smooth and well combined. Gently fold in most of the chopped mint leaves.
  3. Step 3: Combine strawberries with the dressing. Add the prepared strawberries to the bowl with the yogurt dressing. Gently fold them in until all the strawberries are lightly coated. For best flavor, cover and refrigerate for at least 15-20 minutes to allow the flavors to meld and chill.
  4. Step 4: Assemble the salad. Spoon the chilled strawberry mixture into individual serving bowls or glasses, ensuring an even distribution of strawberries and dressing.
  5. Step 5: Add the "crackle" and serve. Just before serving, generously sprinkle the puffed rice cereal over each portion of the strawberry salad to add the desired crispy "crackle" texture. Garnish with the reserved fresh mint leaves and serve immediately to enjoy the delightful crunch.

Notes

  • To keep your salad perfectly "crackle-fresh," store the strawberry and yogurt mixture covered in the refrigerator for up to 2 days, always keeping the puffed rice cereal separate in an airtight container until serving time.
  • This delightful "Crackle Salad" is meant to be enjoyed wonderfully chilled; please resist the urge to reheat it, as doing so would compromise its refreshing texture and flavor entirely.
  • For a beautiful presentation, try layering the chilled strawberry-yogurt mixture in clear glasses, adding a fresh mint sprig and sprinkling the puffed rice cereal generously on top just before you serve.
  • Chef's Tip: Don't rush the chilling step for the strawberry-yogurt mix; allowing at least 20 minutes (or more!) lets the lime, mint, and vanilla truly meld, creating a much richer and more "refreshing" flavor profile.
