Ingredients
- Graham cracker crumbs: 1 cup
- Unsalted butter, melted: 1/2 cup, divided
- Granulated sugar: 3/4 cup, divided
- Cream cheese, softened: 16 ounces (two 8-oz blocks)
- Large egg: 1
- vanilla powder: 1 teaspoon
- Golden Oreos or Nilla Wafers: 1 1/2 cups, crushed
- Freeze-dried strawberries: 1/2 cup, crushed
Instructions
- Step 1: Preheat oven to 325°F (160°C). Line a 24-cup mini muffin tin with paper liners. In a medium bowl, combine 1 cup graham cracker crumbs, 1/4 cup granulated sugar, and 1/4 cup melted butter. Mix well. Divide evenly among the muffin liners and press firmly to form the crust. Bake for 5 minutes, then remove and let cool slightly.
- Step 2: In a large bowl, using an electric mixer, beat the softened cream cheese with the remaining 1/2 cup granulated sugar until smooth and creamy, about 2-3 minutes. Beat in the vanilla powder, then add the egg and beat just until combined, being careful not to overmix.
- Step 3: Spoon the cheesecake filling over the cooled crusts, filling each liner about 3/4 full. Bake for 15-18 minutes, or until the centers are just set. The edges might be slightly puffed. Let cool completely in the muffin tin on a wire rack, then transfer to the refrigerator to chill for at least 4 hours, or preferably overnight.
- Step 4: For the strawberry crunch topping, combine the crushed Golden Oreos (or Nilla Wafers) and the crushed freeze-dried strawberries in a bowl. Add the remaining 1/4 cup melted butter and mix until well combined and crumbly.
- Step 5: Once the cheesecake bites are thoroughly chilled, gently remove them from the muffin tin. Sprinkle or gently press the prepared strawberry crunch topping generously over the top of each cheesecake bite. Serve immediately or store in an airtight container in the refrigerator.
Notes
- Keep these delightful bites chilled in an airtight container in the refrigerator for up to 3-4 days to maintain their creamy texture and crisp topping.
- These bites are best enjoyed straight from the refrigerator; avoid reheating to preserve their delicate creamy texture and the crunch of the strawberry topping.
- Elevate your presentation by serving these chilled treats with a side of fresh strawberry slices or a small dollop of homemade whipped cream.
- For that perfectly set, creamy texture and easy removal, patiently chill your cheesecake bites for the full recommended time, or even overnight, before topping.
