- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 pound boneless, skinless chicken breasts
- 1/2 cup your favorite BBQ sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 tablespoons olive oil
- 1/2 yellow onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat. Add the diced sweet potatoes and chopped onion. Season with salt and pepper. Cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender. Remove sweet potatoes and onion from the skillet and set aside.
- Step 2: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove chicken from the skillet and shred or dice into bite-sized pieces.
- Step 3: Return the shredded/diced chicken to the skillet. Pour in the BBQ sauce and stir to coat the chicken evenly. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
- Step 4: Add the cooked sweet potatoes and onions back into the skillet with the BBQ chicken. Gently stir to combine all ingredients.
- Step 5: Sprinkle the shredded cheese evenly over the top of the sweet potato and chicken mixture. Cover the skillet with a lid (or foil if your skillet doesn't have a lid) and cook for 3-5 minutes, or until the cheese is melted and bubbly.
- Step 6: Remove from heat and serve hot directly from the skillet.
Notes
- Keep any delicious leftovers fresh in an airtight container in the refrigerator for up to 3-4 days, making quick work of future meals.
- To reheat, gently warm portions in the microwave or a covered skillet over low heat, perhaps with a tiny splash of water or chicken broth, to keep the chicken moist and the sauce from drying.
- This hearty skillet is a complete meal, but serving it alongside a crisp green salad or some warm, crusty bread would perfectly round out your dinner.
- For an extra depth of flavor, try mixing a small amount of chipotle in adobo sauce into your BBQ sauce before combining with the chicken, or add a pinch of smoked paprika with the sweet potatoes.
