- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil

- 1/2 cup raspberry preserves
- 1 medium jalapeño, seeds removed and finely diced
- 2 cloves garlic, minced
- 2 tbsp soy sauce (low sodium preferred)
- 1 tbsp apple cider vinegar
Instructions
- Step 1: Pat the chicken dry with paper towels and season generously with salt and black pepper.
- Step 2: Heat olive oil in a large skillet or non-stick pan over medium-high heat. Add the seasoned chicken breasts/thighs and sear for 3-5 minutes per side until golden brown. Remove chicken from the pan and set aside.
- Step 3: Reduce heat to medium. Add the minced garlic and diced jalapeño to the same pan. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Step 4: Stir in the raspberry preserves, soy sauce, and apple cider vinegar. Bring the sauce to a gentle simmer, stirring occasionally, and let it cook for 2-3 minutes to thicken slightly.
- Step 5: Return the seared chicken to the skillet, spooning the sauce over the chicken to coat it. Reduce heat to low, cover, and simmer for another 8-12 minutes, or until the chicken is cooked through (internal temperature of 165°F / 74°C) and the sauce is a glossy glaze.
- Step 6: Serve immediately with your favorite sides, optionally garnished with fresh raspberries or chopped cilantro.
