- Trader Joe's Organic Brown Rice (frozen or shelf-stable): 2 cups cooked
- Avocado: 1 ripe, diced
- Lime: 1, cut into wedges
Instructions
- Step 1: Prepare the fish. Pat the mahi-mahi fillets dry and season generously with Trader Joe's Chili Lime Seasoning on both sides. Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Cook the fish for 3-4 minutes per side, or until flaky and cooked through. Remove from pan and flake into bite-sized pieces.
- Step 2: Prepare the rice and slaw. While the fish cooks, prepare the brown rice according to package directions (if using Trader Joe's frozen rice, microwave as directed). In a separate bowl, toss the Trader Joe's Organic Shredded Green & Red Cabbage with a squeeze of fresh lime juice if desired.
