Ingredients
Scale
- 8 ounces spaghetti
- 1 small head of cabbage, finely shredded
- 4 ounces turkey turkey bacon or turkey bacon, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Step 1: Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve about 1 cup of pasta water before draining.
- Step 2: In a large skillet over medium heat, add the diced beef pancetta or turkey bacon and cook until crispy. Add the minced garlic and sauté for an additional minute until fragrant.
- Step 3: Stir in the shredded cabbage to the skillet with the turkey beef bacon and garlic. Cook until the cabbage is wilted and tender, about 5-7 minutes.
- Step 4: In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with salt and pepper to taste.
- Step 5: Add the drained spaghetti to the skillet with the cabbage mixture. Remove from heat and quickly pour in the egg and cheese mixture, tossing everything together while adding reserved pasta water as needed to create a creamy sauce.
- Step 6: Serve immediately, garnishing with chopped fresh parsley and additional Parmesan cheese if desired. Enjoy your creamy cabbage carbonara!
Notes
- For optimal storage, keep any leftover Creamy Cabbage Carbonara in an airtight container in the refrigerator for up to 3 days to maintain its creamy texture.
- When reheating, gently warm the dish on the stove over low heat, adding a splash of reserved pasta water to restore creaminess and prevent it from drying out.
- Serve your carbonara with a sprinkle of extra Parmesan and a side of garlic bread for a delightful meal that pairs perfectly with the creamy flavors.
- For a chef's tip, be sure to reserve enough pasta water before draining; this starchy water is key to achieving that silky sauce consistency when mixing with the egg and cheese!
