Ingredients
Scale
- 2 large chicken breasts (about 1 pound), boneless and skinless
- 2 medium poblano peppers, roasted and diced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Step 1: Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with cooking spray or olive oil.
- Step 2: In a skillet over medium heat, add the olive oil. Season the chicken breasts with salt, pepper, and garlic powder, then cook them for about 5-7 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.
- Step 3: In the same skillet, add the diced roasted poblano peppers and sauté for about 2 minutes until they are heated through. Add the chicken broth and bring it to a simmer.
- Step 4: Stir in the heavy cream and half of the Monterey Jack cheese into the skillet, mixing well until the cheese is melted and the sauce is creamy. Simmer for an additional 2-3 minutes to thicken slightly.
- Step 5: Return the cooked chicken breasts to the skillet, spooning the creamy poblano sauce over them. Top with remaining Monterey Jack cheese, then transfer the skillet to the preheated oven. Bake for about 15 minutes or until bubbly and golden on top.
- Step 6: Remove from oven, let it cool slightly, then serve warm with rice or tortillas as desired. Enjoy your Creamy Poblano Chicken!
Notes
- For optimal storage, keep any leftover Creamy Poblano Chicken in an airtight container in the refrigerator for up to 3 days. When reheating, gently warm the dish in the oven at 350°F (175°C) until heated through to preserve its creamy texture; you can add a splash of chicken broth if it thickens too much. Serve this delicious dish over fluffy rice or with warm tortillas to soak up the rich sauce, adding a side of your favorite vegetables for a complete meal. For extra flavor, consider marinating the chicken breasts in lime juice and spices before cooking, which will enhance the overall taste of your creamy poblano sauce.
