Ingredients
Scale
- 2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cocoa powder (for frosting)
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and grease two round 9-inch cake pans with butter or cooking spray, then line the bottoms with parchment paper for easy removal.
- Step 2: In a blender or food processor, combine the grated carrots, granulated sugar, vegetable oil, and eggs. Blend until the mixture is smooth and well combined.
- Step 3: In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the blended carrot mixture to the dry ingredients, stirring until just combined.
- Step 4: Divide the batter evenly between the prepared cake pans and bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- Step 5: For the frosting, beat together softened cream cheese and butter in a mixing bowl until smooth. Gradually add powdered sugar and cocoa powder, mixing until fluffy. Once the cakes are completely cooled, spread a layer of frosting between the two cake layers and then frost the top and sides of the cake as desired.
- Step 6: Decorate with additional grated carrots or chocolate shavings if desired, then slice and serve your decadent Brazilian carrot cake!
Notes
- To store your decadent Brazilian carrot cake, keep it in an airtight container at room temperature for up to 3 days or refrigerate for up to a week to maintain its freshness.
- For reheating, gently warm individual slices in the microwave for about 10-15 seconds, just enough to take the chill off without drying out the cake.
- Serve this cake with a dollop of whipped cream or a scoop of vanilla ice cream on the side for an extra indulgent treat that complements the rich flavors.
- For best results, ensure your eggs and butter are at room temperature before mixing; this helps create a smoother batter and contributes to a lighter cake texture.
