Ingredients
Scale
- 2 cups fresh rhubarb, finely diced
- 1/2 cup red onion, finely diced
- 1 small jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
Instructions
- Step 1: Prepare the fresh ingredients by finely dicing the rhubarb and red onion. Seed and mince the jalapeño (adjusting amount to desired spice level), and finely chop the fresh cilantro.
- Step 2: In a medium mixing bowl, combine the diced rhubarb, red onion, minced jalapeño, and chopped cilantro.
- Step 3: Add the fresh lime juice, granulated sugar, and salt to the bowl with the other ingredients. Stir gently but thoroughly to ensure all components are well combined.
- Step 4: Cover the bowl and refrigerate the salsa for at least 30 minutes to allow the flavors to meld and the rhubarb to soften slightly. Before serving, taste and adjust seasonings if necessary, adding more sugar, lime juice, or salt to suit your preference.
Notes
- Store any leftover Delicious Fresh Rhubarb Salsa in an airtight container in the refrigerator for up to 3-4 days; the flavors often deepen beautifully overnight.
- This vibrant salsa is best enjoyed chilled, so there's no need for reheating; simply serve it straight from the fridge or let it sit at room temperature for a few minutes if preferred.
- Elevate your meals by spooning this unique salsa over grilled chicken, salmon, or beef, or enjoy it as a refreshing topping for fish tacos or even alongside a sharp cheddar cheese.
- For the most harmonious flavor, allow the salsa to chill for at least an hour, or even longer, as this gives the rhubarb time to macerate and all the wonderful ingredients to truly meld.
