- 8 oz (1 block) cream cheese, softened
- 1/2 English cucumber, thinly sliced
- 4–5 small radishes, thinly sliced
- 1 small carrot, finely grated
- 1 tbsp fresh dill, chopped
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Prepare the vegetables and herbs. Thinly slice the English cucumber and radishes into very thin rounds. Finely grate the small carrot. Roughly chop the fresh dill. Set aside in separate small bowls.
- Step 2: Prepare the bread. Lay out the slices of white sandwich bread and carefully trim off all the crusts using a sharp knife. This creates a clean edge for the tea sandwiches.
- Step 3: Make the cream cheese spread. In a small bowl, combine the softened cream cheese with the salt, black pepper, and half of the chopped fresh dill. Mix well until smooth and evenly combined.
- Step 4: Assemble the sandwiches. Take six of the bread slices and spread a generous layer of the cream cheese mixture evenly over one side of each slice. On three separate cream cheese-covered slices, arrange the cucumber slices; on another two, arrange the grated carrot; and on the last one, arrange the radish slices, creating colorful patterns.
- Step 5: Finish assembly and cut. Top each decorated slice with one of the remaining plain bread slices, cream cheese-side down, to form complete sandwiches. Gently press down on each sandwich, then cut each one into four equal triangles, or into small rectangles.
