- 3 cups Fruity Pebbles cereal, divided
- 10 oz mini marshmallows
- 3 tablespoons unsalted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon alcohol-free vanilla extract
- 1 cup heavy whipping cream, cold
Instructions
- Step 1: Prepare the Fruity Pebbles taco shells. Line a baking sheet with parchment paper. In a large microwave-safe bowl, melt the butter and mini marshmallows together in 30-second intervals, stirring until smooth. Add 2 1/2 cups of Fruity Pebbles to the melted marshmallow mixture and stir quickly until fully coated.
- Step 2: Form the taco shells. Immediately spoon portions of the warm Fruity Pebbles mixture onto the parchment paper. Using another piece of parchment paper on top, gently press each portion flat to about a 4-inch round. Carefully drape each flattened round over the handle of a wooden spoon, a taco holder, or a creased piece of foil to create a taco shell shape. Let them cool completely for at least 30 minutes to set.
- Step 3: Make the cheesecake filling. In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla bean paste until smooth and creamy. In a separate cold bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
- Step 4: Assemble and chill the cheesecake tacos. Carefully fill each cooled and set Fruity Pebbles taco shell with the cheesecake filling using a spoon or piping bag. Sprinkle the remaining 1/2 cup of Fruity Pebbles over the top of the filling for garnish. Place the assembled tacos back on the parchment-lined baking sheet and refrigerate for at least 1-2 hours to allow the filling to set.
Notes
- Keep your assembled Fruity Pebbles Cheesecake Tacos in an airtight container in the fridge for up to 3 days to keep the filling fresh and the shells from getting too soft.
- These tacos are best enjoyed chilled; reheating is not recommended as it will melt the creamy filling and make the cereal shells soggy.
