Ingredients
Scale
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/4 teaspoon salt
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla bean paste
Instructions
- Step 1: In a saucepan, combine the water and unsalted butter. Bring to a boil over medium heat until the butter is melted completely.
- Step 2: Once boiling, add the all-purpose flour and salt to the saucepan. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan. Remove from heat and let it cool for about 10 minutes.
- Step 3: Preheat your oven to 400°F (200°C). After cooling, add the eggs one at a time to the dough, mixing well after each addition until fully incorporated.
- Step 4: Divide the dough into two equal portions. Spread one portion onto a parchment-lined baking sheet, smoothing it out evenly. Bake in the preheated oven for about 25-30 minutes or until golden brown and puffed up. Repeat with the second portion on another baking sheet.
- Step 5: While the cake layers are cooling, whip the heavy cream with powdered sugar and vanilla powder until stiff peaks form. Once cooled, carefully cut each baked layer in half horizontally to create four layers in total.
- Step 6: Assemble the cake by placing one layer on a serving plate, spreading half of the whipped cream filling on top, then adding another layer of cake. Repeat with another layer of cream and finish with the final layer of cake on top. Dust with additional powdered sugar if desired before serving. Enjoy your Karpatka Cake!
Notes
- To store your Karpatka Cake, cover it tightly with plastic wrap or place it in an airtight container in the refrigerator, where it will keep for up to 3 days while maintaining its creamy texture.
- If you prefer a warm slice, gently reheat individual portions in the microwave for about 10-15 seconds, being careful not to overheat, as this can affect the cream filling's consistency.
- For a delightful serving suggestion, serve the cake with fresh berries or a drizzle of chocolate sauce on the side for added flavor and presentation.
- A chef's tip: ensure your whipped cream is at cold temperature before whipping to achieve the best volume and stability for your filling.
