Ingredients
Scale
- 4 ripe peaches, halved and pitted
- 1/4 cup honey
- 2 tablespoons dried culinary lavender
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- Fresh mint leaves for garnish
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and place the peach halves cut-side up in a baking dish.
- Step 2: In a small saucepan over low heat, combine the honey and dried lavender. Stir gently for about 5 minutes until the honey is infused with the lavender flavor.
- Step 3: Drizzle the lavender-infused honey over the peach halves in the baking dish, ensuring they are well coated.
- Step 4: Bake the peaches in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized.
- Step 5: While the peaches are baking, mix together the Greek yogurt and lemon juice in a bowl until smooth.
- Step 6: Once the peaches are done, remove them from the oven and let them cool slightly. Serve each peach half topped with a dollop of lemony Greek yogurt and garnish with fresh mint leaves.
Notes
- For optimal storage, keep any leftover Lavender Honey Peach Cups in an airtight container in the refrigerator for up to 2 days, but note that the peaches may soften further. If you want to enjoy them warm again, gently reheat the peach halves in the oven at 300°F (150°C) for about 10 minutes, being careful not to overcook them. These delightful peach cups pair beautifully with a scoop of ice cream or can be served as a brunch centerpiece alongside granola and fresh fruit. For a more intense flavor, let the honey and lavender mixture steep off heat for an additional 10-15 minutes before drizzling it over the peaches!
