- 1 package (1 sheet) puff pastry, thawed
- 1 egg, beaten (for egg wash)

Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Step 2: In a large skillet over medium-high heat, heat the olive oil. Season the beef pieces with salt and pepper, then sear them in the skillet for about 2-3 minutes until browned on all sides. Remove from heat and let cool slightly.
- Step 3: In the same skillet, add the finely chopped mushrooms and garlic. Sauté until the mushrooms release their moisture and become golden brown, about 5-7 minutes. Remove from heat and let cool.
- Step 4: Once both the beef and mushroom mixtures have cooled, combine them in a bowl. Stir in the Dijon mustard until well mixed.
- Step 5: Roll out the puff pastry on a lightly floured surface and cut it into squares (about 3×3 inches). Place a small spoonful of the beef mixture in the center of each square, fold the corners over to enclose the filling, and seal with a fork.
- Step 6: Place the assembled bites on the prepared baking sheet. Brush each one with beaten egg for a golden finish. Bake for about 15-20 minutes or until puffed and golden brown. Serve warm.
