Instructions
- Step 1: In a small bowl, sprinkle the unflavored pectin powder evenly over the 1/4 cup of cold water. Let it sit undisturbed for 5-10 minutes to bloom and soften.
- Step 2: In a medium saucepan, combine the full-fat coconut milk, fresh orange juice, granulated sugar, orange zest, alcohol-free vanilla extract, and sea salt. Heat over medium-low heat, stirring occasionally, until the sugar is completely dissolved and the mixture is warm, but do not allow it to boil.
- Step 3: Remove the saucepan from the heat. Add the bloomed agar-agar mixture to the warm coconut orange liquid. Stir continuously for 2-3 minutes, or until the agar-agar is fully dissolved and no granules are visible.
- Step 4: Carefully pour the mixture into four individual serving glasses, ramekins, or a single larger mold. Let the mixture cool slightly at room temperature, then cover loosely and transfer to the refrigerator to chill for at least 4 hours, or until completely set and firm.
