Instructions
- Step 1: In a bowl, combine the shrimp with olive oil, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Toss until the shrimp are evenly coated and let marinate for about 15 minutes.
- Step 2: While the shrimp is marinating, prepare the mango salsa by mixing together diced mango, red onion, jalapeño, lime juice, and chopped cilantro in a separate bowl. Set aside to allow the flavors to meld.
- Step 3: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side or until they turn pink and opaque.
- Step 4: Warm the corn tortillas in a separate pan or microwave until pliable.
- Step 5: Assemble the tacos by placing a portion of shrimp on each tortilla and topping with generous spoonfuls of mango salsa. Serve immediately with lime wedges on the side. Enjoy!
