- 2 cups fresh strawberries, hulled and sliced

- 1 teaspoon alcohol-free vanilla extract

Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Step 2: In a mixing bowl, combine the sliced strawberries, granulated sugar, cornstarch, and vanilla bean paste. Toss gently to coat the strawberries evenly and set aside to let the mixture macerate for about 10 minutes.
- Step 3: Roll out the thawed puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into squares or rectangles, depending on your desired size.
- Step 4: Place a spoonful of the strawberry mixture onto the center of each puff pastry square. Be careful not to overfill as this may cause them to leak during baking.
- Step 5: Fold the edges of the pastry over the filling to create a pocket and seal by pressing down with your fingers or fork. Brush the tops with beaten egg for a golden finish.
- Step 6: Bake in the preheated oven for about 20-25 minutes or until the pastry is puffed and golden brown. Once done, remove from the oven and allow them to cool slightly before dusting with powdered sugar and serving. Enjoy!
