Ingredients
Scale
- 8 rice paper sheets
- 1 cup cooked rice noodles
- 1 cup mixed vegetables (carrots, bell peppers, and cabbage), thinly sliced
- 1/2 cup cooked shrimp or tofu, sliced (optional)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Cooking spray or olive oil for air frying
- Fresh herbs (mint or cilantro) for garnish
Instructions
- Step 1: Prepare the filling by mixing the cooked rice noodles, mixed vegetables, cooked shrimp or tofu (if using), soy sauce, and sesame oil in a bowl until well combined.
- Step 2: Dip each rice paper sheet in warm water for about 10-15 seconds until it becomes pliable. Lay it flat on a clean surface.
- Step 3: Place a small amount of the filling mixture along the bottom third of the rice paper. Fold in the sides and roll it up tightly, starting from the bottom and working your way up to form a spring roll.
- Step 4: Preheat your air fryer to 375°F (190°C). Lightly spray or brush the rolls with cooking spray or olive oil to help them crisp up during cooking.
- Step 5: Arrange the rolls in a single layer in the air fryer basket and cook for about 8-10 minutes, flipping halfway through, until they are golden brown and crispy.
- Step 6: Remove from the air fryer, let cool slightly, and serve with your favorite dipping sauce. Garnish with fresh herbs before serving. Enjoy!
Notes
- For optimal storage, keep any leftover rice paper noodle rolls in an airtight container in the fridge for up to 2 days; just be aware they may lose some crispiness. When reheating, air fry the rolls at 350°F (175°C) for about 3-5 minutes to restore their crunchiness—no one likes a soggy roll! For a delightful presentation, serve your crispy rolls with a vibrant dipping sauce like sweet chili or peanut sauce, and sprinkle fresh herbs on top for that extra pop of flavor. A great chef's tip is to ensure the filling is well-drained before wrapping to prevent excess moisture that can make the rice paper soggy during cooking.
