Indulge in the sweetness of summer with this easy upside-down cake made with fresh peaches and a splash of peach nectar.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 ripe peaches, sliced
  • 1/2 cup peach nectar
  • 1/4 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla bean paste
  • 1/2 teaspoon salt

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and grease a round cake pan with non-stick spray or butter to prevent sticking.
  2. Step 2: In a small bowl, mix the melted butter with half of the granulated sugar (1/8 cup) and pour it into the bottom of the prepared cake pan. Arrange the sliced peaches over the butter-sugar mixture in an even layer.
  3. Step 3: In a separate mixing bowl, combine the remaining granulated sugar (5/8 cup), all-purpose flour, baking powder, salt, peach nectar, and vanilla bean paste. Stir until just combined and the batter is smooth.
  4. Step 4: Pour the batter evenly over the arranged peaches in the cake pan. Gently spread it out with a spatula if necessary.
  5. Step 5: Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for about 10 minutes before inverting onto a serving plate.
  6. Step 6: Serve warm or at room temperature, optionally topped with whipped cream or vanilla ice cream for added indulgence. Enjoy!

Notes

  • For optimal freshness, store any leftover cake in an airtight container at room temperature for up to two days, or refrigerate it for up to a week.
  • To enjoy the cake warm again, reheat individual slices in the microwave for about 15-20 seconds, or pop them in a toaster oven for a few minutes to retain some crispiness.
  • For an extra special treat, serve your upside-down cake with a scoop of vanilla ice cream or a dollop of whipped cream to complement the peach flavors beautifully.
  • When mixing the batter, be sure not to overmix; stopping as soon as the ingredients are combined will keep your cake light and fluffy!
