- 2 large ripe avocados
- 2 (5 oz / 142g) cans tuna in water or oil, drained
- 1/4 cup mayonnaise
- 1/4 cup finely diced red onion
- 1 stalk celery, finely diced
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Step 1: In a medium bowl, flake the drained tuna with a fork. Add the mayonnaise, finely diced red onion, finely diced celery, fresh lemon juice, salt, and black pepper. Mix thoroughly until all ingredients are well combined.
- Step 2: Carefully halve each avocado lengthwise and remove the pit. Using a spoon, gently scoop out some of the avocado flesh from the center of each half, leaving enough avocado to create a sturdy "bowl." Place the scooped-out avocado flesh into the bowl with the tuna mixture.
- Step 3: Gently mash the scooped avocado flesh into the tuna mixture with a fork until mostly combined and creamy. Taste the mixture and adjust seasoning (salt, pepper, or lemon juice) as desired.
- Step 4: Spoon the tuna and avocado mixture generously into each of the hollowed-out avocado halves, mounding it slightly on top.
- Step 5: Serve immediately as a light meal or appetizer. For best results, consume shortly after preparing to prevent avocado browning. Garnish with a sprinkle of fresh chopped parsley or dill if desired.
